Power Pancake Recipe
We here at Total Balance feel breakfast is the most important meal of the day! The Power Pancake gives you the healthy balance of protein, carbs and good fats that will give your body the ingredients it needs to perform the best for you! Enjoy this pancake for breakfast or ANY time!
- 3 eggs (free range, organic best option)
- 1/3 c. oatmeal (organic, rolled oats best option)
- 1-2 T organic extra virgin coconut oil (canola oil, butter can be used as a substitute)
- 1/4 tsp salt
- 1/3 c. cottage cheese
- dash of vanilla - optional
- 1/2 tsp. baking powder (aluminum free best option)
Preheat a medium sized pan and add the coconut oil. Mix all ingredients together in a blender or Magic Bullet including the melted coconut oil. Blend together until well blended. Pour as one large pancake into the pan or cook 2-3 smaller pancakes. Cook on one side until bubbles start to form then flip and cook until lightly golden on the opposite side. Toppings could include: butter, natural peanut butter, pure maple syrup, cream cheese, simply fruit jelly or natural applesauce. Enjoy!!
